Questions
Will this pass a PDF/A validator?
Do not rely on it. Formal PDF/A also needs embedded fonts, an output intent and metadata this flatten does not certify.
Can I still select the text?
No. The archival copy is a picture of each page. Keep the original if you need the text layer.
